It’s been a super long time since I did a What I Ate post. To be completely honest the more routine my days got, so did my meals. Now that I’m self-employed and summer is over I look forward to spending more time in the kitchen yet again.

Chris has been on a food detox for a while now, cutting back the processed foods and having little to no dairy. As I type he’s munching on the leftover kale stems from a salad I just made – this kid means business.

Angry Chocolate

Lunch 12-19-2010

The other day I had some great spur-of-the-moment fusion food. It looks a tad boring in the photo but I assure you it was bursting with flavor, and my nose was running before I was even halfway finished. It happened like this: Chris was heating up some beans and rice.

Dinner 8-24-2010

Cheese tortellini from Trader Joe’s and homemade gluten-free Alfredo sauce (which is pretty pointless poured over traditional pasta, but I still made it for the sake of experimenting for future dinners). The garnish is just a leaf of basil and a few shakes of black pepper.

Afternoon Snack 8-4-2010

Curried mashed potatoes and soy sauce; leftovers from the night before. A treat I first had at a dinner party with my favorite vegans, Tatton and Gina. To prepare… Cook a medium pot full of your favorite potato until the skins begin to fall off the potatoes (about 20-30 minutes).

Pizza made with Bob’s Red Mill’s Gluten-Free Pizza Crust Mix. Toppings in order of appearance: Trader Giotto’s pizza sauce, parmesan, New Zealand White Cheddar, prosciutto, diced tomato, fresh basil, chevre, black pepper and garlic powder. Fusilli Chili

Chili and pasta is one of those great comfort foods that really makes me think of home. I first had the dee-licious combo from my MIL, and considering we’re gearing up for a family road trip next weekend it’s no wonder I had the hugest craving for it last night.
