Coconut Date Balls

I post about food a lot, huh? ;)
What can I say – my life revolves around it. I love to cook, I love to eat and I love to take pictures of what I eat. So, naturally, I love to blog about what I eat, too. I swear I have some non-food related stuff in the works but, I can’t promise that it isn’t cat related, either.
Well, it’s been awhile since I posted a real live recipe here. Ummm… About 5 months, apparently. Yikes… So with that realization, we’re going to learn how to make coconut date rolls.
Anyone who lives a stone’s throw from a natural foods store has probably already treated themselves to these wholesome snacks. What you probably don’t know is how incredibly easy they are to make, so long as you’ve got a food processor at your disposal. A blender would work in a pinch, I imagine.


Coconut Date Rolls
Makes 10-15
Ingredients:
20 Medjool dates
1/2 cup Walnuts or Almonds
1 cup (more or less) Shredded coconut, unsweetened
Directions:
1. Slice each date in half and remove the pit.
2. Throw the walnuts in a food processor and pulse into smithereens.
3. Toss in the pitted dates and continue to pulse until a paste is formed.
4. Form the paste into individual balls and roll in shredded coconut.
Not even five steps. Easy peasy!
Just remember not to eat too many in one sitting or else you’ll be very motivated to get up and go, ifyouknowwhatimean.

i wish i could say i was a fan of coconut, but it just never was my cup of tea!
Oh man, coconut is an addiction for me! Back at my first cafe job I was hopelessly in love with coconut mochas. That said, the coconut taste isn’t really all that present with these – especially with the finely shredded, unsweetened coconut. They mostly just provide a texture, and keep the balls from sticking to each other. I’ve also seen them sans-coconut, rolled in yet more ground nuts, instead.
Love the tones here. And I’ll bear these in mind next time I…err…well, you know.

These look delicious (yeah for coconuts) and so easy to make – will try them out. Thanks for sharing such beautiful pictures…the world needs more beauty!
